YUM :: Southern Comfort Grilled Cheese

Have I mentioned that my husband is a fantastic cook? Last week, I was craving a grilled cheese and he treated me when he made the most phenomenal grilled cheese either of us had ever had. The last grilled cheese that I enjoyed almost as much was at The American Grilled Cheese Kitchen in San Francisco.

Before you do your weekend grocery shopping, you might want to add a few ingredients to your list so that you can enjoy a Southern Comfort grilled cheese, too. The recipe was in GQ and is from Chef Harrison Keevi of Brookville Restaurant in Charlottesville, Virginia. Southern Comfort
1 Tbsp. butter
2 slices rustic/artisan bread
3 thick slices high-quality pre-cooked bacon
3 think slices Granny Smith apple
2 Tbsp. mayonnaise
2 oz. Swiss cheese or Gouda, thinly sliced

1. Preheat the oven to 350.
2. Preheat an iron skillet over medium heat.
3. Assemble the sandwich on a plate. Butter the outside of the bread and place the non-cheese ingredients between 2 slices of cheese to keep the bread from sliding off.
4. Add 1/3 tablespoon of the butter to the skillet and cook to brown.
5. Lay the sandwich in the pan for 1 1/2 minutes.
6. Flip, then cook for an additional 30 to 45 seconds.
8. Spread the remaining butter on the just-browned side, transfer the sandwich to a baking sheet, and place in the oven for a few minutes - how long you keep it in depends on how melty you like your cheese.
9. Pull out your grilled cheese and let it sit for a minute before devouring.
